Texas Caviare

 1 tsp salt
1/ 4 cup olive oil
3/4 cider vinegar
1 can black beans
1 can black eyed peas
1 can shoe corn
2 -3 jalapenos diced
1/2 can pimientos
1/2 bunch cilantro
1 red or green pepper diced

Mix and chill. Serve with tortilla chips.
